It’s marathon day and I’ve got my spectating shoes on at the Chicago Marathon. While you are reading this, I am either cheering my face off for all my Saucony 26 Strong teammates or helping them celebrate their amazing race.

What’s for Dinner?

Sunday: Marathon celebration dinner with Saucony and Competitor Magazine

Monday: Sweet Potato and Black Bean Enchiladas

Tuesday: Cinnamon spiced salmon + massaged kale + roasted butternut squash

Wednesday: Slow cooker chicken + roasted veggies

Thursday: Pumpkin Sage Baked Ziti

Friday: Leftovers

Saturday: Dinner out
