It’s the weekend before school starts here so we are trying to pack in some fun before the daily weekly routine begins again.
Although my kids have school for two days before having a 4 day weekend for the Labor Day. We don’t want to jump right into school just yet. It’s better to ease in!
Back to school means back to packing lunches everyday. I’m planning on prepping with my kid’s favorite Easy Morning Glory Muffins and some cookie balls. Maybe Coconut Apricot Bites and 3 Ingredient Cookie Bites?
Our weekend plans for next week are still up in the air. I had hoped to run the Jay Peak Trail Festival – NOT the 25 or 50k but the three 5k races back to back to back. It’s aptly named Trail Runners with Issues because why else would you want to run a Black Diamond, Blue Square and Green Circle course all in one morning? But the hotel situation is looking a little slim. And I don’t want to sleep in my car so… We’ll see what I can work out.

Sunday: Grilled Fish Tacos
Monday: Grilled Chicken + Pizza Pasta Salad
Tuesday: Quinoa Enchilada Bake
Wednesday: First day of school + sports practice = quick dinner of pick your egg + veggies
Thursday: Grilled Salmon + Kale Blueberry Salad
Saturday: Out if traveling
