By the time you read this, I’ll either be running or done with my second 20 miler of this training cycle. We got a lot of rain Saturday that is supposed to continue on through the night. Hopefully we won’t need ice skates rather than running shoes!
It’s Sunday so that means it’s time to figure out What’s for Dinner!
Sunday: Maple Salmon w/ baked sweet potatoes and roasted broccoli
Monday: Egg and Avocado Sandwiches or over greens
Tuesday: Dinner out – My Birthday!!
Wednesday: Chicken Kung Pau Cauliflower
Thursday: Southwest Spaghetti Squash Casserole
Saturday: Broccoli Quinoa Casserole
Our friends at Arctic Zero hooked us up with dessert for a bit. They have a new line up of chunky flavors coming out at the end of the month and sent us a sneak peak. Chunky Pints are packed with chunks of delicious treats. With no artificial flavors, sweeteners or colors, they are full of real ingredients. In addition, they are lactose free, non GMO and some are gluten free. It’s hard to believe that something so delicious is only 75 calories a serving or 300 calories for the whole pint! The Cookie Dough was calling my name and it delivered. What’s not to love about cookie dough? The Buttery Pecan is a close second.
