Monday: Green smoothie pancakes

Tuesday: Black Bean Burgers + Chopped Salad w/ Cumin Lime Vinaigerette

Wednesday: Crispy Tofu Veggie Bowls (pic above)

Thursday: Spaghetti Squash Crust Pizza

Saturday: Leftovers/clean out the fridge

  1. Isnt it beautiful? I am absolutely loving this weather right now! Your meals look pretty darn good to me! I am interested to see how you get on with the spaghetti squash crust….I loved cauliflower, and am thinking of giving spaghetti squash a try! Let us know ๐Ÿ™‚ I start back running today ๐Ÿ™‚

    1. Green smoothie pancakes – Make a green smoothie and add it to the dry ingredients for pancakes. No extra liquid needed!

  2. that spaghetti squash crust pizza looks amazing!! I actually just started eating more black bean burgers too. I discovered it because my sister made some. I was always kinda of skeptical about it tasting good but I love them now! I’ll definitely have to try making that pizza – I’ve seen cauliflower crust but never spaghetti squash. Thanks for sharing!

  3. This week I’ll be cooking from the Nom Nom Paleo cookbook. I’ve got the recipes written down on the fridge, tbh I can’t be arsed going to the fridge to get the list. I know there are beef ribs on there and big o bacon burger patties on there as well. Should be good. I’m excited.
