Does that salad look divine? It’s my latest obsession lately. Zoodles, strawberries, snap peas, walnuts and spinach with a balsamic vinaigrette. I’ve had it for lunch but it could easily be made for dinner too. Grilling up chicken, salmon or shrimp to top it off would be perfect. So good and so easy.
I hope you are having a great weekend. Saturday was absolutely fan-freaking-tastic. The weather was absolutely gorgeous from the moment I woke up till I went to bed. It was a full day of kid activities in the morning, a trail run in the afternoon (why do I run most of my miles on the road?!?!), followed with date night with Ron to celebrate our 14th wedding anniversary a few days early. It was a great day!
It’s Sunday so besides being Sunday Runday, it’s meal planning day.
