Hello!

It’s Sunday so it’s time to figure out what’s for dinner.

But first, let’s chat a bit.

I hope you are having a great weekend.  Despite still having a ton of snow on the ground from last week’s blizzard, it’s been really nice so far. Having blue skies and sunshine makes all the difference.  You know it’s late in the season because the sun feels so much warmer.  I thought about snowshoeing but then changed my mind. It’s funny how it doesn’t even interest me now.  I’m sooooo over winter!

Friday night we went out to dinner for my birthday.  It’s been forever since I had lobster so I went with the Maine Lobster Gratin and roasted veggies.  SO good with big chunks of lobster meat.  I’m not the biggest fan of lobster by itself but when it’s mixed in with something, it’s all good.

What’s for dinner this week?

Sunday: Salmon + Massaged Kale Salad

Monday: Pick your choice of eggs + veggies

Tuesday: Roasted Cauliflower Shells and Cheese

Wednesday: Crockpot Roasted Chicken over Pesto Zoodles

Thursday: Honey BBQ Baked Salmon Bowls

Friday: Pizza night

Saturday: Leftovers/wing it!
