Thanks for all the well wishes about my ankle. I’m not trying to jinx anything but things have definitely improved since I wrote that post Thursday night. My ankle is swollen but the ROM is good, I can stand on my toes without any pain and nothing really seems to hurt to the touch. I’ve been R.I.C.E – ing like a boss in addition to Epsom salt soaks and a concoction of tumeric, lime juice and water paste. Hey, I’ll try anything if it means I’ll be able to run on Saturday. Six days!!
It’s Sunday, so it’s meal plan time. Ugh. I’ve been feeling very uninspired with recipe lately. I go through phases where I want to actually follow a recipe and cook. And then there are weeks where I just want to stick with old stand bys and keep it simple. It still tastes good. It’s just the usual.
This week, I added a couple of new recipes that sounded good to the meal plan. Hopefully I will make at least one and that will pop me out of my funk. Although it’s summer and summer wasn’t meant for spending too much time inside cooking. Maybe I’ll just slack off on meal planning all summer so I’ll look forward to it in the fall? Probably not a good idea.
What’s for dinner this week?
Sunday: Grilled fish tacos (I’m using haddock)
Monday: Grilled burgers (veggie and grass-fed beef) + grilled veggie kabobs
Tuesday: Grilled Honey Mustard Salmon
Wednesday: Chicken and strawberry Zoodles bowls (supposedly strawberry picking starts this week at a local farm!)
Thursday: Mushroom Quinoa Meatball Sandwiches
Saturday: Mt. Washington celebratory dinner!
