How’s your weekend? Mine is going very well thank you very much.

I had a fun run-rise meet up with Katie who is in the area visiting this weekend. I love meeting blogging friends in person. You never know what you are going to get when you meet someone “in real life” for the first time. She’s just as awesome as I had imagined! You can see our fun run on Instagram.

The weather has been gorgeous so my fingers are crossed that it stays that way for today. We are supposed to see the Little Mermaid play in the park but the weather forecast is calling for rain. I know we need the rain but could it wait till the evening hours please?

Here’s what’s for dinner this week:

Sunday: Salmon with Thai Curry Peanut Sauce

Monday: Pick your egg sandwiches or over greens (for me)

Tuesday: Grilled Chicken over Rainbow Bowls

Wednesday: Grilled shrimp with Kale Blueberry Superfood Salad

Thursday: Black Bean Corn and Avocado Wraps or as a dip

Friday: Vermont

Saturday: Vermont

  1. Those bites and the muffins look perfect for breakfasts and snacks not only for me BUT for my toddler twins who aren’t into a lot of different things! and I cannot wait to make that peanut thai sauce ๐Ÿ™‚
