What’s for Dinner? {Week of February 26}

What's for dinner this week I've got a weeks worth of easy, healthy meal planning ideas for the whole family to enjoy. happyfitmama.com

Happy Sunday!

I hope everyone is having an enjoyable weekend.  Can we talk about the weather for a minute? It’s straight up crazy here in New Hampshire.  Temps in the 50s and 60s with unbelievable blue skies.  I keep exclaiming – “I can’t believe this is February!”   I know it won’t stay forever.  March is notorious for snowstorms.  It sure is nice to be running in shorts again.  And I even broke up the flip flops.  I’m going to soak it up as much as I can until the temps drop.

Spring fever has hit me hard!

It’s the kids’ school vacation week.  We have plans to go skiing/snowboarding but I’m not sure how it’s going to pan out.  Sure there will be snow but there’s also some rain in the forecast.  Skiing in the rain isn’t nearly as fun as singing in the rain.

We’ll see what happens.

It’s Sunday, so it’s time to plan out what’s for dinner.

Sunday: Pesto Salmon + roasted Brussels sprouts

Monday: Crockpot Two Bean Veggie Chili

Tuesday: Taco Tuesday

Wednesday: Dinner out

Thursday: Whole Roasted Chicken + roasted butternut squash + quinoa

Friday: Ron’s homemade pizza

Saturday: Wing it!

How’s your weather?

What’s for dinner at your house this week?

  1. This weather is so bizarre but I’ll take it! Have fun with the spring break week… ours isn’t until April. I love that you add a ‘wing it’ night- I think I need to do that, as it often happens once or twice a week!

  2. The weather has been get cold so having a hot cacao make me have a wonderful day. This weekend is my friend ‘s birthday so we will have Backyard barbeque party.
