What’s for Dinner? { Week of April 9 }

What's for dinner? happyfitmama.com

I don’t want to jinx anything.

But…I think spring might finally be here.

Let me take a moment to knock on every single piece of wood before I continue.

It’s hard to believe that last weekend we had a major snowstorm that dumped about a foot of snow.  This weekend it’s sunny.  Today it’s supposed to be 60 and the next few days in the 70s.  I’m sure everyone running Boston is praying that the weather isn’t like this next Monday.  No one wants a repeat of last years hot, hot weather.

You never know what you’ll get on Marathon Monday!

In addition to not being able to run right now, I’m also restricted on activities spent on my feet.  With the gorgeous weather, I want to be outside, being active.  I was itching to go for a long walk but I knew I should lay low still.  I’m hoping I can get my bike out today.

Another sign spring is here? The local ice cream stand opened on Saturday.  We showed restraint and are hoping to hit it up today. Lol!

It’s Sunday, so it’s time to plan out what’s for dinner this week.

Sunday: Grilled Salmon + veggies

Monday: Sweet Potato Chickpea Buddha Bowl

Tuesday: Taco Tuesday

Wednesday: Crockpot Roasted Chicken

Thursday: Chicken Avocado Salad with Peanut Dressing (using leftover chicken from Wednesday)

Friday: Date night!

Saturday: Ron’s Homemade Pizza

What’s for dinner at your house this week?

  1. Spring came at the perfect time- I am loving it! My run wasn’t until mid day today and it was amazing to finally feel good in shorts and short sleeves. Plus we got in a picnic for dinner… the girls are so much happier outside!

  2. Hi — just found my way to your blog — really enjoying! Thank you. Funny, we have “Taco Tuesday” and “Salmon Monday” in our house. With three kids, the salmon thing became a valuable ritual for a less-than-popular meal — they don’t even ask what’s for dinner on Mondays … my littles just give a quiet groan from time to time when they realize what day it is. A victory, though — my son age 13, after years and years, finally came to love salmon and requires TWO full pieces. 🙂
