Hey guys!

Just popping in for meal planning for the week.

Hope you all are enjoying the long holiday weekend. It’s been gorgeous here in New Hampshire so far. Fingers crossed it lasts at least a couple more days!

So what’s for dinner?

I’m not feeling too inventive or motivated in the kitchen just yet. I’m sure that will all change when the temps drop and Fall’s chill is in the air.

Till then…

Sunday: Baked Cod + green salad

Monday: grilled chicken + veggies

Tuesday: Chickpea and Veggie Quinoa Burgers

Wednesday: Ron’s homemade pizza

Thursday: Ranchero Breakfast Tostadas

Friday: leftovers

Saturday: wing it

  1. It is okay to have the same things when you are lacking motivation, I usually find mine comes back as I go through the week and see what others are making. I need to try some veggies burgers sometime soon, quinoa ones especially sound good. With my mileage being so high right now, fueling right is essential! Have a wonderful sunday!

  2. I’m usually so organised with meal planning, the last few weeks though nope. Tomorrow hubby is going to cook, Tuesday will def be slow cooker night (roast), rest of the week, no idea… yet, except veggies will be involved.
    Need to get into meal planning, maybe after my holidays in September.

  3. I love the breakfast for dinner idea too. I’ve been having trouble with planning meals the past few weeks too. School starts this week and I think it will help. I’m starting a meatless Monday link up tomorrow if you’d like to add any of your recipes. 🙂

  4. I have never been the type of person to plan meals, mostly because I do not have the time. I guess it would not hurt to be a but more organized and do a little bit of meal planning. I like your recommendations, especially the quinoa burger. Thank you for the link to the recipe. Could be interesting to make it.
