What’s for Dinner?

Hey guys!

Just popping in for my weekly meal planning post. Like I said last week, I really haven’t been in the mood for cooking. I’d rather enjoy the last days of summer (it pains me to even write that!) having fun than in the kitchen.

So here’s just a rough estimate of what’s for dinner this week.

Sunday: Grilled cod + veggies (we’ve got zucchini and tomatoes coming out of our ears!)

Monday: Baked Broccoli Slaw Egg Rolls

Tuesday: Salmon Black Bean Enchilada Bake – didn’t get to make it last week!

Wednesday: Dinner out

Thursday: Grilled Caprese Chicken

Friday: Black Bean Avocado Quinoa Bake (pictured above – so easy and so good!)

Saturday: Wing it

  1. We must be on the same wave length. It was a tough week to stick to the meal plan. We had an unprecedented 13″ of rain on Wednesday and then a cold snap that reminded me of how fleeting these last few days are. But hey, fall running is pretty fabulous for the trails 🙂

  2. Hey it all looks delicious thanks for some great ideas. Just fyi couldn’t comment on the Reader page on WP… idk if that’s a setting or what. But again thanks for the recipes.. but you didn’t highlight the Caprese– what you just grill it then throw the fresh moz, tomato and basil on top?

  3. These sound like great options. I made something tonight that I hope will reheat well since I’m traveling tomorrow and Tuesday. Once I get home, it will be some sort of grilled chicken.
