Just popping in for my weekly meal planning post. Like I said last week, I really haven’t been in the mood for cooking. I’d rather enjoy the last days of summer (it pains me to even write that!) having fun than in the kitchen.
So here’s just a rough estimate of what’s for dinner this week.
Sunday: Grilled cod + veggies (we’ve got zucchini and tomatoes coming out of our ears!)
Monday: Baked Broccoli Slaw Egg Rolls
Tuesday: Salmon Black Bean Enchilada Bake – didn’t get to make it last week!
Wednesday: Dinner out
Thursday: Grilled Caprese Chicken
Friday: Black Bean Avocado Quinoa Bake (pictured above – so easy and so good!)
Saturday: Wing it
