It’s a beautiful weekend here and I’m dying to get outside, so this post is going to be short and sweet.

My desire to be in the kitchen cooking has been slacking lately. Summer is way too short to be inside. Easy does it has and will be my motto for the rest of the summer. BTW – I do not like how chilly it is in the morning and evening lately. It’s feeling rather Fallish. Boo!

Sunday: Grilled Lime Chicken with Black Bean Avocado Salsa (pictured above)

Monday: Brinner – Blueberry Banana French Toast

Tuesday: Caprese Quinoa Bake (didn’t get to make it last week)

Wednesday: Dinner out

Thursday: Salmon Black Bean Enchilada Bake

Friday: Wing it/Clean out the fridge

Saturday: Ron’s Homemade Pizza

  1. I’m normally organised for dinners, this week has been very last minute though. It happens.
    I do have a roast in the slow cooker for tonight, and doing chicken kebabs for dinner tomorrow.
    Thursday no idea yet, possibly taco’s.
