Just popping in for a quick meal planning update. I’m off to spectate and cheer on all my friends running the Seacoast Half Marathon today. That’s right another DNS. I’m bummed I’m not running my all time favorite race, but it’s for the best. I’ve got 5 weeks till Honolulu and I don’t want to screw anything up!

What’s for dinner this week?

Sunday – Baked Salmon w/ Saweet! Potato Casserole with Crunchy Nut Crumble

Monday –Β  Poached eggs w/ avocado toast

Tuesday – Easy Spaghetti Squash Pizza Bake

Wednesday – Peanut Sauce Stirfry + Baked Broccoli Slaw Eggrolls

Thursday – Pumpkin and Kale Pasta Bake

Friday – Leftovers

Saturday – out

  1. Very smart move on passing up another race. I know it’s not easy, but it sounds like you are pumped and ready for Honolulu in just a few weeks. Enjoy cheering your friends & all the other runners on this week!

    The meal I’m most excited about this weekend would be: Lazy Girl Chicken Pot Pie. Joshua’s been asking me to make chicken pot pie for weeks & figured I’d be a good wife & make his wishes come true. Ha!

    1. That’s what I’m telling myself! Plus, I really wanted to support my friends out on the course. I know how much joy it brings to see a familiar face when you are racing, even if it is for 10 seconds.

  2. I saw your picture of the potato casserole and promptly pinned the recipe to make for my parents “thanksgiving weekend” since we won’t all be together Thanksgiving day. This week we have some quick easy meals as it’s a heavy work week – weekend leftovers, “Indian Food” (not indian flavored at all but nicknamed by my husbands family), and trying a new recipe BBQ Chicken Pizza soup! Not sure what I’m making this weekend but it might be a chili.
