Spinach Burger with roasted sweet potato rounds. REALLY good recipe that a friend shared with me that I will post soon. I’m just tweaking it a tad first.
My once every two years “I really want a beef burger” meal. I usually don’t eat red meat but a craving for a grilled burger comes on every so often. It hit the spot so I’m good for another couple of years I guess.
So it’s been weeks since I’ve shared some of my eats lately. Truthfully, April was a weird month of eating. My tummy wasn’t feeling the greatest for some reason so I was stuck to eating really bland food on a lot of days. But things seem back to normal now. I’ve haven’t taken a whole lot of pictures of my food either for that reason. Brown and bland aren’t that photogenic. But here are a few things that I’ve been enjoying.
Breakfasts and Snacks
One of the best green smoothie bowls I’ve made in a long time – I think I threw everything but the kitchen sink in it. Too bad I only got to enjoy 1/4 of it since my little munchkins devoured the rest.
CORE Defender Bars – Still loving these pre long run. They keep me satisfied with no issues.
Homemade granola – My kids love granola so rather than shell out mega $$ for the organic variety, I make my own. Plus, I know exactly what’s in it!
OIAJ – love!
Blueberry Muffin for one – I had an intense craving for blueberry muffins for one week. This baby hit the spot!
Sambazon Energy Smoothie – This surprised me and was actually really good! Stay tuned for a giveaway next week.
My post from yesterday couldn’t have come at a better time. I needed a reminder of what makes me happy after we got seriously dumped on. WTF – 10 + inches of snow in mid March is just plain cruel. And for that I give you a scowl.
Since it was snowing, I got the urge to bake and restock our snack supply. I wanted to make some of my usual chocolate balls but we were running low on dates. I improvised and came up with a really easy and delicious combo. So easy that it almost seems silly to put it into a recipe format!
Four ingredients for one yummy snack! More additions could be added too. Almonds, walnuts and protein powder would all be delicious. It’s funny but I really don’t like the taste of coconut but it seems to be growing on me the more I eat it.
It’s time for a recap of some of my favorite eats from the week. Or better yet, the past few weeks. It’s been three weeks since the last Eats from the Week post. I’ve been kind of in a food rut lately. Nothing sounds really, really good to me so I’ve been making a lot of the usual standbys.
