It’s Wednesday so it’s time for WIAW with Jenn. I liked showcasing some of my favorite foods from the past week rather than just from one day last week so I’m doing it again. I think it gives it a little bit more variety. What can I say, I’m a rule breaker. Plus, I can make bigger collages!
Frozen kale really “poofs” up a smoothie. Had to make a smoothie bowl instead of in a glass!Roasted Brussels Sprouts are fabulous morning, noon and night. Peanut Butter and Company Dark Chocolate Dreams + raspberries = LOVE! Wrap w/ avocado hummus, shredded cabbage, tomato, red onions, zucchini and a pickle + cara cara orange slices, Stir fry veggies + nutritional yeast + grain free crust (still working on the recipe) baked in the oven, Roasted salmon zucchini and lemon, Strawberries + melted dark chocolate, roasted veggies, Eggs + sauteed leeks and spinach (I can’t quit you – so good!).
Lemon Blueberry Chia Bread (recipe needs a little tweaking before I release it), Quinoa Sweet Potato Mushroom Kale Bowl (all my favorites in one bowl!), Roasted Black Eyed Peas (better than roasted chick peas!) to snack on.
If you can’t tell, I’ve been on a serious roasting kick. When you roast veggies, so much more flavor comes out. Just a little olive or coconut oil does the trick. Plus, it quenches my belly warming food thirst.

It depends on the season for me. In the summer, I’m all about raw. Winter, warm is best.
