Roasted Is Best

 Hi Friends! Happy Wednesday! I have been absolutely loving reading everyone’s most courageous moments. You all are fearless ladies! If you haven’t entered yet, there’s still time to win a one of a kind “Courage” Necklace from my good friend Holly.

It’s Wednesday so it’s time for WIAW with Jenn. I liked showcasing some of my favorite foods from the past week rather than just from one day last week so I’m doing it again. I think it gives it a little bit more variety. What can I say, I’m a rule breaker. Plus, I can make bigger collages!

WIAW January16 - happyfitmama.comFrozen kale really “poofs” up a smoothie. Had to make a smoothie bowl instead of in a glass!Roasted Brussels Sprouts are fabulous morning, noon and night. Peanut Butter and Company Dark Chocolate Dreams + raspberries = LOVE! Wrap w/ avocado hummus, shredded cabbage, tomato, red onions, zucchini and a pickle + cara cara orange slices, Stir fry veggies + nutritional yeast + grain free crust (still working on the recipe) baked in the oven, Roasted salmon zucchini and lemon, Strawberries + melted dark chocolate, roasted veggies, Eggs + sauteed leeks and spinach (I can’t quit you – so good!).

WIAW January16 (2) - happyfitmama.comLemon Blueberry Chia Bread (recipe needs a little tweaking before I release it), Quinoa Sweet Potato Mushroom Kale Bowl (all my favorites in one bowl!), Roasted Black Eyed Peas (better than roasted chick peas!) to snack on.

If you can’t tell, I’ve been on a serious roasting kick. When you roast veggies, so much more flavor comes out. Just a little olive or coconut oil does the trick. Plus, it quenches my belly warming food thirst.

It depends on the season for me. In the summer, I’m all about raw. Winter, warm is best.

  9. I’m with you – roasted! So good (or grilled during summer months). I love the combo of kale and sweet potatoes especially with quinoa or wheat berries.

    All of your meals just look so good. I’ve never tried Kale in my smoothie before, I may have to give it a try. Lately I’ve been enjoying celery in them. Sounds weird, but it makes them taste so refreshing!

    I love ALL veggies! My family thinks I’m crazy because I add them to just about everything. I philosophy is there is a veggie that’s compatible with every dish, well ok maybe not every dish, but I try. Happy Wednesday love!

  14. I love roasted veggies during the winter but grilled during the summer. I think winter vegetables are just better roasted and easier to do that way. Grilling fennel, turnips or parsnips just doesn’t sound as appetizing as roasting does!

  25. I’ve been roasting lately too! I spend the whole summer not using my oven because it’s just too darn hot, so I am so excited to use it now. I just love the flavor of roasted veggies!

    As do all of those veggies! Favorite kind is roasted or steamed. Depends. Acorn squash-roasted. Yellow squash- steamed.

    I totally get you about roasting anything. I love cleaning up my fridge at the end of the week and just roasting whatever I have left. It makes for a great meal and uses up all that produce. I need to try the roasted black eyed peas.
