Why you ask?

I made it eleven whole days into September before I had my first taste of pumpkin for the fall season.

Whoa. This is huge for me.

Usually I’m anxiously awaiting the first taste of anything pumpkin. But this year, not so much. I’m blaming the weather. It’s just been too dang hot to even think about food in general.

Since last Friday, I have made up for those missed eleven days. I’ve had Pumpkin Spiced Yogurt Pretzels (sooooo good!), a pumpkin latte, pumpkin in my oatmeal, pumpkin muffins and this super easy Pumpkin Protein Bars.

Super Easy Pumpkin Protein Bars
 
Ingredients
  • ½ cup Organic Pumpkin Puree (not pumpkin pie filling)
  • ½ cup Almond Butter
  • ⅓ cup Honey
  • 1 Scoop Vanilla Protein Powder (I used Orgain)
  • 2 Eggs
  • 2 tsp Pumpkin Pie Spice
  • 1 tsp Pure Vanilla Extract
  • ¼ tsp Sea Salt
  • ½ tsp Baking Soda
Instructions
  1. Preheat oven to 350 degrees.
  2. Spray an 8 X 8 pan with coconut oil or spray.
  3. Mix all ingredients together in a large bowl till smooth.
  4. Pour batter into pan.
  5. Bake 30 minutes or until toothpick comes out clean from center.
  6. Cool completely in pan before enjoying.

I’m apparently not the only one who is on the pumpkin kick. When I went to the grocery store yesterday, there were ZERO cans of pumpkin left. Zero. Please don’t tell me there’s another pumpkin shortage like a few years ago? What will I do?!?

  1. Maybe it’s genetic—I love all things pumpkin too. This weekend I made pumpkin muffins and pumpkin mousse and next is a pumpkin smoothie this morning.

  3. Eleven days is impressive! For me it has a lot to do with the weather with how soon I dive into fall. Sometimes here in MN when it gets chilly in August I don’t make it until September. Than years like last year I made it a lot longer. This looks delicious! I love everything about fall, not only the pumpkin, apples, and cool temps but my favorite has to be baking.

  4. I made these and added some dark chocolate chips. I’m on the gestational diabetes diet and these are the perfect snack for keeping my blood sugar numbers low! My husband and 2 year old love them, too. Tomorrow I’m going to make another batch and try adding a banana this time.
