Hey Happy Fit Mama readers! It’s Nancy over at spiffykerms taking over Angela’s blog for the day 😉
Just before I dive right into some of my favorite foods for summer (mostly supper and treats), I’d like to introduce myself a little bit. I’m a Canadian blogger, originally from the East Coast living near Toronto. I blog about my CrossFit experiences, share some food posts and recipes with my readers, and I’m an avid rock climber all while taking care of my small little family which consists of the Boyf, myself and our Pomeranian. 🙂
As much as I enjoy cooking, one thing I really don’t like to during the hot and humid summers is spend too much time in the kitchen. Thankfully the Paleo recipe I’m about to share with you is way easy, and so quick. Even though it does require turning on your oven. Apologies!
All of the items below are paleo friendly. I did a 30 day Paleo challenge in April with my local CrossFit box, and I’ve been slowly adapting eating Paleo on a regular basis ever since. There’s a few occasions I eat a sandwich with a glass of milk, or icecream for supper… because I just want to. No harm in doing that, it’s all in moderation am I right?
My two favorite suppers for summer, and lets get real – all year round too:
- Paleo chicken strips
- Lemon Pepper Chicken Stir Fry (amazing as leftovers too)
- Breakfast for supper, with egg muffins and bacon!
My Ironman triathlete boyfriend doesn’t eat paleo with me, but that doesn’t mean I cook two separate meals every time I make something. For instance, there’s tons of spices and seasoning substitutes that are paleo friendly and taste delicious. Rather than use soy sauce, I use Tamari (for the Lemon Pepper Chicken Stir Fry) and it’s just as tasty. If I make rice for the stir fry, I won’t eat any. Or if I make potatoes, I’ll make white for him, sweet for me. It’s really easy once you get the hang of it.
