I’ve had a really, really hard time planning meals lately. I’m blaming the heat. Nothing sounded good and I didn’t even want to turn on my oven. We’ve been eating a lot of sandwiches, salads and smoothies every week. Cold is good. I realized on Sunday when I was ready to make a list for grocery shopping that I needed to get back into my habit of picking 3 or 4 recipes for the week. I like a plan instead of pulling something together at the last moment. Here’s what’s on tap this week:

Obviously, I’m a fan of Mama Pea’s! So far this week we’ve had the Tempeh Tamale Pie.

I’ve made this a few times before. It kind of comes out blah so I always top it off with salsa. There were leftovers on Monday so that covered 2 meals. With only picking out 3 recipes it saves room for leftovers and random meals when I don’t feel like cooking.

I just got a great new (to me) protein powder over the weekend. Plant Fusion came highly recommended from the #FitVegan twitter chat last week. I got the chocolate and am highly impressed. It’s been my favorite powder so far. My first taste of it was post run on Saturday. I mixed it with 1 cup unsweetened almond milk, 1/2 frozen banana and a scoop of almond butter. OMG! Delicious! It tasted just like chocolate soft serve.

No chalky after taste either. I like Vega but this one is much better tasting and much more friendly on the wallet! I’ve heard nothing but good reviews of all the flavors.

After seeing PB2 all over this Mama’s blog, I finally gave in and ordered some of it to see what all the fuss was about.

With only three ingredients (peanuts, sugar and salt) this powdered peanut butter is the real deal. It’s not as good as nut butter but pretty damn close. It’s perfect for smoothies and oatmeal. I tried it as a topping for my homemade zucchini bread. Yup, good on that too! It not only gives the taste of peanut butter but with 85% less fat and calories. Sounds like a win to me! ๐Ÿ™‚ There’s a chocolate flavor, too, which is next on my list to try.

It’s been a couple of weeks since I posted the kiddos meals. Here’s just a snippet of a few from the past week.

Hummus and zucchini sandwiches, carrots, and dates

Avocado and banana sandwich with orange peppers and hummus

Black bean guacamole, homemade pita chips and roasted sweet potato

Adzuki bean dip (spinach added so that’s why it’s green ๐Ÿ™‚ ), crackers, fresh peaches and raspberries

I think the kiddos are in the same rut as us. They only want sandwiches or dip lately. Yogurt and cottage cheese are requested a lot too. It was quite funny last week when in the clearest voice, A asked for “Cottage cheese please!” It took Ron and I both by surprise because it was so clear. Most of her words are still in toddler speak. The girl knows what she wants! ๐Ÿ˜‰

  1. I have not been planning meals either. I blame the heat too. I need to shop around some recipes. You have shared some great ideas. The Vega IS expensive, so I appreciate the suggestion of another plant protein. I am also intrigued by the powdered peanut butter. I had never heard of this. Thanks!

  2. Seriously addicted to PB2. I have found some good deals on it through Netrition actually. Those recipes all sound fantastic. I need to head over to her site and check them out. Oh, and if you want a sweet treat – mix the PB2 with a liquid vanilla or hazelnut stevia and the water and spread on a rice cake or apples. MMMMM

  3. I try to plan my meals for the week too. With three teenagers in the house it gets crazy with all the schedules so it helps to know that I have at least a couple meals ready to go!

  4. I love PB2…you will love the chocolate one too! I add it to all sorts of things. You can add it to baked goods for a peanuty taste, but I also love to just sprinkle over my oats.

  5. I’m so terrible at meal planning. I feel like we have a handful of go-to dinners and lunches and constantly cycle through them and we’re all getting bored. I need to start experimenting in the kitchen again but haven’t been feeling inspired lately! Maybe for like one dish and then I retreat back to the old standbys.

  6. Ooh! Plant fusion is my FAVORITE protein powder – I found it about a year ago when I was searching high and low for a vegan/soy free protein that didn’t taste horrible!! I don’t go neat soy products. So, complete winner there. I hear you on the meal planning, it has been so hard lately! But I’ve been doing a pretty good job of pulling some tasty meals together on the fly:)

    1. Summer is just hard to plan meals in general. There’s just so much to do that you don’t want to be tied to the kitchen. Let me know if you give PB2 a chance!

  7. I just stumbled upon your blog and I love it! I agree with you on the lack of meal planning, due to the Summer. I try to plan our meals for the week on Sunday, but we have had family in town and been on vacation lately, so it’s been hard to stick with it. The past few weeks have been all about scrambling, thus making bedtime a little later for our son, who turns 2 next month. I need to get back on track! Oh, PB2 is awesome, I love that stuff! The chocolate flavored one isn’t as good. It is not as chocolatey as I would have like.

  8. I love seeing what your kiddos ate! There were some combinations that I never thought of— the munchkin meals link-up is great to see all of the variety in what kids will and do eat! We eat TONS of avocado, but I never thought to put it with banana and I’ve never had adzuki bean dip… do you just basically make a hummus with adzuki beans? My kids love hummus, but I’m all for trying new things!

  9. It’s been awhile since I’ve had PB2 in my cabinet but I use to love putting it in post workout shakes…yum! I should make another trip to the grocery store to get some.
