Hey guys!
I hope you are having a great weekend.
Here in the Northeast, it’s insanely gorgeous. 80 degrees at the end of September?
Crazy!
I have very good news to report from Zooma Cape Cod yesterday – I ran and got a PR! I’ll give you all the details in tomorrow’s post but first let’s talk meal planning.
What’s for dinner this week?
Sunday: Baked Cod, Roasted Butternut Squash and Massaged Kale
Monday: Brinner – Make your own omelets
Tuesday: Spicy Apple and Chickpea Salad
Wednesday: Slow Cooker Honey Garlic Chicken
Thursday: Perfect Broccoli Cheese Soup
Friday: Leftovers
Saturday: Something easy!
What are you having for dinner this week?
Congrats on the pr- so awesome! I’m glad your achilles held up for you. Looking forward to the report!

Congrats on the PR! It’s 80 degrees here in Denver — but next week it’s going to get down to the 60s, so we’ve been trying to enjoy every hour of warm weather that we can…
Great recipe ideas!

I’m trying to use up all of the random stuff in the freezer, so we’ll be having some interesting meals this week. I just wish it would cool off enough to eat soup so I could use up the random meat that way.

Awesome job on the PR! I’ve started to try and meal plan again, and had a successful week last week, this week we have some grilled food (hello nice weather in September!), homemade pizza, meatball subs, greek chicken, and mexican soup & tacos. Weened is up in the air due to plans. It’s nice come home and either a)know exactly what to start doing for dinner or b)have it done already via crockpot. Hopefully, I can stick with it this time!
Is that some sort of cheese or egg whites in your salad? I can’t tell, but it looks delicious!
I think I’ll be having quite a bit of salad this week, as I just bought a box of spring mix. I’m thinking of also some brown rice pasta with a homemade light cabonara sauce one day as well.

So happy for you and your great 5K!!!
This week will be a bit scattered – we have a huge event coming up and family traveling in this week so it will just be lots of simple meals while I prep for everything.
