Meal Planning: Week of September 15

Hey friends!

I hope you are having a lovely weekend. Ours has been low key, full of running (me) and just hanging out enjoying the early Fall weather. All week I’ve had the baking bug. We went apple picking last weekend so I’m finally using up the last of the apples to make apple butter today. So good and my house smells amazing! Of course, pumpkin has been on my mind too. Pumpkin waffles and Pumpkin Walnut Muffins have been made this week. Mmmmm!

Sunday: Fishy Day! Whatever looks good at the fish market is what’s for dinner. 🙂

Monday: Black bean + egg quesadillas

Tuesday: Dinner out – Fundraiser for CHAD A Night to Be a Hero. Come on out if you are local to help support a great cause!

Wednesday: Grilled Pesto Chicken Kabobs

Thursday: Crispy Orange Cauliflower + Tofu

Friday: Leftovers

Saturday: Roasted Veggie Lasagna

  1. Your menu looks great. We eat chicken pedal kabobs all the time. I put cherry tomatoes in between the chicken cubes so yummy!

    I have had the baking bug- I saw a pumpkin snicker doodle recipe that I’d love to try. But the baby’s first birthday party was last weekend and we have sugar cookies I made coming out our ears right now. So we’ll muddle through those. Hopefully before Christmas. Ha. I’d love one for breakfast with my pumpkin spice latte! What?!

    This week:
    Sunday lunch: garlic shrimp and rice, garlic and cheddar biscuits
    Sunday dinner: BBQ chicken sliders
    Monday: leftovers
    Tuesday: baked sweet and sour chicken and fried rice
    Wednesday: out- bball sign ups and church so time is short
    Thursday: chicken fra diablo
    Friday: pizza
    Saturday: birthday date night

    1. Awww! Thank you so much. I try to eat as healthy as I can because it’s fuel for making you feel good running and just living your life. When I don’t eat right, my performance stinks and I just feel horrible. You live and learn!
