Meal Planning: Week of September 29

It’s Sunday Funday!

Hope you are doing something fun and exciting to close out the weekend. Not quite sure of our plans but it will include lots of outdoor time soaking in the gorgeous New Hampshire weather. I love Fall days like this!

Fall2013It’s also meal planning day!

Here’s what I’ve got planned for the week:

Sunday: Fish tacos with Mexican Slaw
Monday: Pumpkin Yogurt Pancakes
Tuesday: Chickpea Tacos
Wednesday: Grilled burger night – beef for Ron, black bean for me and the kids
Thursday: Crock pot Sweet Potato Lentils
Friday: Leftovers
Saturday: Grilled pesto cheese + roasted veggies

  1. Those leaves on the trees look STUNNING! That’s one thing I really miss when I live in Los Angeles, the leaves changing color. I have noticed it being FALL in Los Angeles though because I wake up in the morning and the air is really crisp… However, nothing beats that beautiful picture you took ๐Ÿ™‚

    1. All I do for pumpkin yogurt pancakes is add about a cup of can pumpkin and a cup of plain yogurt to the regular ingredients for pancakes. I’ve made it with box mixes or from scratch. My kids love ’em!
