Even though the Meal Planning Challenge for October is over, I think I still may post my plan for the week. It’s been a way to hold myself accountable and to get a little bit more organized when it comes to the weekly shopping.
Here’s what this week is looking like, that is if Hurricane Sandy doesn’t overly rain on our parade.
Sunday: Vegetable Quinoa Soup
Monday: Cheesy Mushroom Broccoli Skillet
Tuesday: Southwestern Pizza
Wednesday: Leftovers
Thursday: Baked Polenta w/ Veggies – Inspired by this recipe.
Friday: Pasta with roasted Brussels Sprouts and red onions
Saturday: Clean out the fridge night/night out?

Keeping it simple with grilled chicken and veggies..cooking a ton ahead of time just in case we lose power for days!!

I love meal planning. This week for dinner we’re having Fried Brown Rice & stir fry veggies, leftovers Black bean & cheese quesadillas, Lasagna, Baked potato bar & salad, Pizza and dinner out some where on Saturday. I keep my menus and pull up the file with menus and just select a week sometimes if I don’t feel like being creative. Another thing that helps is have theme nights. Sunday is Asian foood, Monday is usually a soup/salad, Tuesday is Mexican, Wednesday Italian, Thursday Comfort Food, Friday Pizza, Saturday is usually out or something that actually has meat in it. Most of my family just doesn’t like to eat meat so I only do one meal a week with it unless someone asks for a specific meal.

I didn’t do any meal planning this week! Need to get better at that, and preparing meals on Sunday, or else I find myself have PB&J and cheez-its a couple times a week for dinner. That polenta recipe looks delicious!
