It’s another week of Meal Planning!
Last week went well. I did stray from the plan on one night. After playing outside with the kids on a chilly afternoon, all I could think about was soup. So I cracked open a can of Trader Joe’s Lentil Vegetable soup and made grilled cheese sandwiches. We don’t have canned soup often but I like to keep a few on hand for quick meals. It hit the spot and I didn’t have to deal with
two four hungry bears while we waited for dinner. 🙂
The hardest days of the week for eating dinner are Monday and Friday in the HFM house. Ron and I are both at work all day. The kids are in school all day. By the time we all get home, we’re tired. I try to plan for easy dinners like leftovers or breakfast for dinner. That’s one of our go-to’s if we want something fast and easy. It’s on the plan every week!
Here’s what my meal plan looks like this week:
Sunday: Baked Hake with roasted Brussels Sprouts.
Monday: Breakfast for dinner
Tuesday: Lentil Mushroom Burger
Wednesday: Crock Pot Taco Two Bean Soup
Thursday: Veggie Quiche (based loosely on this recipe)
Saturday: Take out/Dinner out
My original plan was for fish tacos on Sunday but the fish guy talked me into trying Hake. I’ve never had it. He said it’s just like Haddock but sweeter. We’ll see how it goes over.

Crock Pot Taco Two Bean Soup
28 oz. can crushed tomatoes
2 c frozen corn ( I like Trader Joe’s roasted corn)
2 c black beans
2 c pinto beans
Ranch Seasoning (see note)
2 Tb Taco Seasoning
1 small onion, chopped
Put all ingredients in the Crock Pot. Cook on low for 4-6 hours.
Note: To make your own ranch seasoning combine the following in a small bowl
1 tsp dried chives
1 tsp dried parsley
1 tsp dried dillweed
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp salt
1/4 tsp black pepper
