Last week’s meal plan looked good on paper (or on a screen). In reality, only one of my intended dinners (Southwestern Pizza) was actually made. It’s really good if you are wondering. Hurricane Sandy squashed Monday’s meal. I didn’t want to start cooking and have the power go out. So we kept it simple. The rest of the week was simple, too. Everyone’s tummy was feeling a little “off” so we kept things bland and boring.
I’m hoping to get back on track this week. Here’s how the week is looking:
Sunday: Spicy Fish Tacos
Monday: Breakfast for dinner
Tuesday: Broccoli, Cheese and Potato Soup
Wednesday: Veggie Pot Pie with homemade biscuits
Thursday: Pumpkin, Bean and Spinach Quesadilla
Saturday: Pasta – carb loading for Sunday’s Seacoast Half Marathon 🙂
