Meal Planning: Week of November 4

Last week’s meal plan looked good on paper (or on a screen). In reality, only one of my intended dinners (Southwestern Pizza) was actually made. It’s really good if you are wondering. Hurricane Sandy squashed Monday’s meal. I didn’t want to start cooking and have the power go out. So we kept it simple. The rest of the week was simple, too. Everyone’s tummy was feeling a little “off” so we kept things bland and boring.

I’m hoping to get back on track this week. Here’s how the week is looking:

Sunday: Spicy Fish Tacos

Monday: Breakfast for dinner

Tuesday: Broccoli, Cheese and Potato Soup

Wednesday: Veggie Pot Pie with homemade biscuits

Thursday: Pumpkin, Bean and Spinach Quesadilla

Friday: leftovers

Saturday: Pasta – carb loading for Sunday’s Seacoast Half Marathon πŸ™‚

  1. They all sound incredible! I have to meal plan or my family would never eat dinner. Sunday is my day to sit down and figure it all out for the week ahead. Hope you have a great week.

  2. Simple is good! I had not planned to cook two nights last week, and then J’s trip was cancelled so we ended up making simple meals, too. I’m trying to find that balance- a lot of meals sound really good, but when there is tons of prep work, I know I’m unlikely to feel like doing it on a week night. Oh, wow, your half is next weekend already? How exciting!

  3. Yay for an upcoming half! Carb loading is so great πŸ˜€ This week I’m planning on a pumpkin pizza (more for breakfast….) and spaghetti squash pad Thai from Peas and Thank You, I’m stoked! Also we will most likely have lentil burgers (homemade ones live in our freezer always!) and some sort of chili. Happy Monday!
