Meal Planning: Week of November 24

Hey friends!

It’s Sunday Funday! Of course, it’s also meal planning day. I sat down last night to come up with the plan for the week but I am drawing a blank about what to have for Thanksgiving. It’s just going to be the four of us so it doesn’t have to be fancy. I keep going back and forth about cooking a turkey. I’m not a huge turkey fan and I don’t want to be stuck with leftovers that will be wasted. I guess it depends on my mood when I hit up the grocery store later today. I’ll be referring to Jill’s awesome post of 25 Delicious Vegetarian Thanksgiving Recipes and my own Thanksgiving Pinterest Board.

Any ideas for me?

  1. Yummm! All of those meals sound delicious! I am intrigued by the smoothie pancakes! I have made apple cider, and greek yogurt pancakes….but smoothie….interesting! So many variations that could be made! I loved my super salad this week, also helped to balance out all the unhealthy eating I have been enjoying since my marathon!

    1. For smoothie pancakes – make a smoothie anyway you like and add it to dry pancake batter. I usually do a green veggie one. No need to add anything else. A little bit different than a traditional pancake but really good.

  2. If we don’t have turkey, we have ham. Or if you want to stick with poultry, you could roast a whole chicken or have cornish game hens — those still call for cornbread stuffing which is really all I care about. 😉

  3. Typically I eat the same dinner nightly… BUT… BUT… I am going home TOMORROW (was supposed to today, but I got to the airport and oh look at that, my flight is canceled!!!) But when I go home, my dad makes me full on deliciousness. If I gain 10 pounds this week, yep, I am totally okay with that! LOL! Thanksgiving will be the big day of eating especially, however, I generally eat tons and tons daily, lol! My stomach is like 5 stomachs in one, no joke!

  4. I clicked through to that Apple Cheddar Pizza and I think I may have to try it. Looks delish. I LOVE turkey. In fact, my husband and I will probably make our own turkey breast after the holiday itself because we never seem to have enough leftovers :)
