Meal Planning: Week of November 11

Happy Sunday everyone! As this post goes live, I should be out running half marathon #7. I’m hoping my tummy is feeling great afterwards. I really could use a nice celebratory dinner. I’m leaning towards something Mexican just because margarita’s always sound good after a sweaty race! Gotta replenish the salt I lost. haha!

Last week was a difficult time in sticking with our meal plan. The kids have decided to become really picky lately. If it doesn’t involve pasta or a nut butter, it gets picked at or not even touched. Dinner is the worst. I try to offer at least one thing I know they’ll  eat. If they don’t want to try anything else, then tough. That’s it. I refuse to be a short order cook. Needless to say, our dinners haven’t been a relaxing event in quite some time.

Here’s how the menu is shaping up for this week:

Sunday: Dinner out/take out if my tummy agrees. :)

Monday:Veggie Omelets

Tuesday: Spaghetti Squash Pad Thai – I bought a spaghetti squash last week with intending to make this. Moving it to this week instead.

Wednesday: Crock Pot Sweet Potato Lentil Soup – one of my favs!

Thursday: Leftovers

Friday: Avocado and White Bean Wraps

Saturday: Clean out the fridge meal or Pasta with homemade spinach pesto

  1. I planned on the Spaghetti squash pad thai last week too, but topped it with a thrown together minestrone instead… I still want to try the pad thai recipe sometime.

    I’m so excited for you out there running right now! Hope your stomach holds up. I can’t wait to hear about it!

  4. First of all I hope your half went well! You had good weather for it:-) I have to try that sweet potato/lentil crockpot soup! I’ve been loving everything spaghetti squash lately! I made a great chicken fried “rice” with spaghetti squash instead of rice last week, it was so yummy!
