Phew…Sunday already. It seems like I spent all day Saturday running – physically and mentally. My last 20 miler is done and I’m officially in taper mode now. (More on that tomorrow for Marathon Monday). The weekends go by way too fast so I’m keeping it short and sweet and getting right to it. The weather is gorgeous and I want to play outside.

Sunday: Celebrating Cinco de Mayo with Creamy Tortilla Soup Enchiladas
Monday: Missed making Lindsay’s Cottage Cheese Egg Muffins last week so trying again – they look so good!
Tuesday: Thai Peanut Salad with Salmon
Friday: Green Smoothies and Almond Butter Toast – super simple dinner to end a busy week!
Saturday: Nutty Noodle Veggie Stir Fry
