Meal Planning: Week of May 12

Happy Mother’s Day everyone! I hope you all have a day off from your mother-ing duties and are spoiled rotten. :)

Meal planning day is here again!

I’ve got a confession – Last week I had a wonderful meal plan lined up. However, when I grocery shopped for the week, I didn’t buy one thing that I needed to make any of it! Whoops! I wasn’t really in the cooking mood either so I scrapped the plan and kept it super simple with salads, veggie stir fries and sandwiches. Not every week goes as planned!

So rather than making up a new plan, I’m recycling the old and adding some new!

Here’s what I’ve got planned:

Sunday: Ron and the kids are in charge for Mama’s day!

Monday:  Lindsay’s Cottage Cheese Egg Muffins – I WILL make these!

Tuesday: Thai Peanut Salad with Salmon

Wednesday: Leftovers

Thursday: Ron’s Homemade Pizza

Friday: Green Smoothies and Almond Butter Toast – super simple dinner to end a busy week!

Saturday: Nutty Noodle Veggie Stir Fry

  1. This whole week is scrapping and winging it because pay day isn’t until Thursday. I’m sure we’ll figure something out. Luckily we always have fish and frozen veggies in the freezer. Guess that’s my plan! I like keeping things simple regardless, I don’t have as much time to cook as I’d like.

  2. We go grocery shopping on Sundays, so we try to roughly plan for the week. But more often than not, we end up winging it. We always make sure we have plenty of fruits & veggies so we have healthy sides. My three-year-old loves carrot sticks & broccoli, so we go through massive amounts of those! Happy Mother’s Day!

  3. I love your Friday dinner plan! Sometimes, all I want is a smoothie but my hubby would not constitute that as a meal. However, he does understand my lack of appetite from time to time and will settle on cooking himself as egg dish while I have a smoothie.

  4. We constantly change up our meal plans – part of why I do such a loose version of planning (I just try to have the stuff on hand for a set # of recipes).

  5. Last week our meal plan was non-existent! I was out of town for the weekend so my husband shopped alone and didn’t plan any meals. He grabbed a few ingredients and told me he knew I would figure it out, lol! We ended up going out last night because we were just out of food! This week we do have a plan, but it doesn’t sound as good as yours! I need to change up some recipes and figure out some new meals to make. Happy Mother’s Day!

  6. I wish I could meal plan! I tend to get cravings or not want to cook what I have planned, etc. I can’t even pick outfits out ahead of time because I’m not sure how I’ll feel when I wake up that morning!

    Thankfully, my cravings are rarely unhealthy so I don’t have to worry about that, but I do wish I could stick to a plan. Grocery shopping would be SO much easier.
