Meal planning day is here again!
I’ve got a confession – Last week I had a wonderful meal plan lined up. However, when I grocery shopped for the week, I didn’t buy one thing that I needed to make any of it! Whoops! I wasn’t really in the cooking mood either so I scrapped the plan and kept it super simple with salads, veggie stir fries and sandwiches. Not every week goes as planned!
So rather than making up a new plan, I’m recycling the old and adding some new!
Here’s what I’ve got planned:
Sunday: Ron and the kids are in charge for Mama’s day!
Monday: Lindsay’s Cottage Cheese Egg Muffins – I WILL make these!
Tuesday: Thai Peanut Salad with Salmon
Thursday: Ron’s Homemade Pizza
Friday: Green Smoothies and Almond Butter Toast – super simple dinner to end a busy week!
Saturday: Nutty Noodle Veggie Stir Fry
