Meal Planning: Week of March 3

Hi friends!

I made the pledge to Unplug from sundown Friday to sundown Saturday. Let me tell you, it was hard! I didn’t fully unplug either. As luck would have it, my brother and his wife had their first baby Thursday night so I was checking my email for pictures the whole time. I also did log the 16 miles I ran on Saturday morning into Daily Mile. (woohoo me!) But that was it. I was getting tweets and wanted to check out instagram but I held back. I will admit it did feel good to unplug even if it wasn’t fully.

Meal planning this week was kind of tough. I’m feeling like my tastes are shifting with the season. While it’s not exactly Spring here yet, it has begun to get a little warmer (yay for 40s!). Spinach salads and tofu lettuce wraps sound light and fresh to me but Ron also requested some heavier comfort meals too.

Sunday: Fish Tacos (might try Laura’s recipe for a new version)

Monday: Egg and Avocado Sandwiches

Tuesday: Chickpea Crockpot Pie w/ Biscuit Topping

Wednesday: Peanut Tofu Lettuce Wraps/tacos

Thursday: Black Bean Enchilada Layered Bake

Friday: Leftovers

Saturday: Veggie Burgers + Sweet Potato Fries

    Sadly I think I’m having the same thing as last week. I didn’t have enough time to plan anything new. :-)

    I love to unplug on occassion. It’s nice to just relax and take a break.

  3. I have a busy day today but I am planning on making my veggie quinoa crock pot soup for the week! Also going to do do some kitchen experimenting with dinners… crazy week ahead!!

  5. Black enchilada layered bake sounds yummy! Your menu planning sounds like what went went through my mind when I planned. Light and fresh was the theme of a few things on my menu this week. Spring please!

    I could eat egg and avocado sandwiches every day for the rest of my life and be a happy girl. Your meal plan sounds great!
    I wish I could have the self control to start unplugging every now and again. I definitely need to focus on that in the near future.

  12. Nice job unplugging! I’ve been in and out all week with traveling, but most of Saturday was unplugged on the plane as well. Hard as it can be, it always feels good to step back. Hope you like the fish- thanks for sharing!

    Wow, your Tuesday/Thursday meals sound delicious! I might have to try them. I love chickpeas and anything with black beans! I’ve been in such a funk in my menu planning because I’m tired of food. So clearly it’s time to kick things up a notch and try something new!

  18. I’m pretty sure it was here that I saw about the unplugging. I kept it in mind but then it snuck up on me! I unplugged for about an hour before I gave in, lol. I need to try it again.
