Meal Planning: Week of March 17

Happy St. Patrick’s Day everyone!

More importantly (to me at least) – it’s my birthday! Despite being born on St. Patty’s Day, I don’t really take part in the usual festivities. No corned beef and cabbage for us. Blech! Maybe I’ll have a green beer but that’s about it.

The plan is to go out to dinner tonight to celebrate so that’s one less meal to plan. Last week’s meal plan didn’t go so well. First, my Kitchen Aid food processor bowl broke so I was unable to make the cauliflower crust veggie pizza. This is the second time I’ve had an issue with the handle in less than a year. I was pretty frustrated with Kitchen Aid and was ready to try another brand when I went looking for suggestions on twitter. Their customer service department reached out to me and was very, very helpful. Another new bowl is on it’s way. I can’t say that I think the quality of Kitchen Aid food processors is great but I give their customer service an A+!

I’m hoping my replacement bowl will be in asap but they promised 7-10 days. That’s a long time to go without green smoothies!

Sunday: Birthday dinner out

Monday: Veggie Burgers + Sweet Potato Fries

Tuesday: Curried Veggie Quinoa Stuffed Peppers

Wednesday: Avocado Egg Sandwiches + fresh veggies

Thursday: Zucchini Lasagna (made zucchini muffins with what I bought for last week. Opps!)

Friday: Green smoothies + veggie pancakes

Saturday: Leftovers

On a side note, yesterday I got a new PDR – 20 MILES! It wasn’t easy but I’m glad I got that milestone in marathon training done. Full recap will be up tomorrow for Marathon Monday.

  1. Happy Birthday and way to go on the 20 miles!! When you do go looking for a new food processor, cuisinart is a great brand. My mom and I both have one and have been very happy. I use mine for nutbutter too and have never had any problems.

  2. Happy Birthday to you and congrats on your new PDR! Yay for you! Bummer on your food processor though but great their sending you a new one! I’m looking forward to purchasing some fresh salmon and enjoying it for dinner this week. We haven’t had it in a while and have been craving it! Have a great day!

  3. Happy Birthday – I hope it’s a great day for you!! Great job on your new PDR yesterday!
    Only 2 meals planned so far: tonight will be a St. Patrick’s themed meal and Tuesday will be a Hobbit themed meal (the DVD comes out that day and my son is having friends over for a watch party).

  4. Happy Birthday! And congrats on the PDR! 20 is never easy:) I have also had similar problems with Kitchen Aid, specifically my blender. The “coupler” on the base broke, now it has no “ridges” where the blender canister attaches. Kitchen Aid is supposed to have this great reputation, but my experience is different. I found a YouTube video on how to fix it, so I’m gonna give that a try.
