A huge THANK YOU to everyone for the support from my letter of apology to my body on Friday. I didn’t realize how therapeutic it would be just to let it all out. I still don’t have a perfect relationship with my body but every day it’s a work in progress. I highly encourage everyone to write their own letter!
I consulted my Pinterest board for meal planning this week. There were quite a few recipes that I had pinned throughout the week that sounded really good to try.
Sunday: Artichoke Spinach Pesto Salmon + roasted veggies
Monday: Veggie pancakes + eggs
Tuesday: Chipotle Roasted Sweet Potato & Cabbage Salad w/ Lime Dressing from Melanie (she has awesome recipes BTW)
Wednesday: Cauliflower Crust Veggie Pizza
Thursday: Zucchini Lasagna inspired by Heather’s recipe
Friday: Pumpkin Spinach Bean Quesadilla
