Meal Planning: Week of March 10

Hi friends!

A huge THANK YOU to everyone for the support from my letter of apology to my body on Friday. I didn’t realize how therapeutic it would be just to let it all out. I still don’t have a perfect relationship with my body but every day it’s a work in progress. I highly encourage everyone to write their own letter!

I consulted my Pinterest board for meal planning this week. There were quite a few recipes that I had pinned throughout the week that sounded really good to try.

Meal Planning Collage 2 -

Sunday: Artichoke Spinach Pesto Salmon + roasted veggies

Monday: Veggie pancakes + eggs

Tuesday: Chipotle Roasted Sweet Potato & Cabbage Salad w/ Lime Dressing from Melanie (she has awesome recipes BTW)

Wednesday: Cauliflower Crust Veggie Pizza

Thursday: Zucchini Lasagna inspired by Heather’s recipe

Friday: Pumpkin Spinach Bean Quesadilla

Saturday: leftovers

    1. I just shred zucchini or carrots into regular pancake batter. Sometimes I’ll add spinach or kale and blend it all in the food processor. The veggies don’t really stick out in flavor. They just add a little bit more nutrition.

    1. The pesto is actually pre-made from my local grocery store. I’m trying to recreate my own recipe so I’ll let you know if I get it just right. It’s REALLY good!
