Meal Planning: Week of June 9

Thank you all for your condolences on my grandmas passing. She’s in a much better place and I’m happy for that. One thing I remember the most about my grandmother that in true Italian style cooking, she would begin prepping for dinner soon after breakfast was done. Grandma’s Sunday dinner was an all day cooking affair. It’s funny how things have changed over the years. While I like cooking, I could never imagine spending a whole day preparing one meal. There’s just too many other things going on!

On to the meal planning for the week!

Eats latey May 8 dinner -

Here’s what I’ve got planned:

Sunday: Baked salmon + grilled veggies
Monday: Guacamole Grilled Cheese Sandwiches + sweet potato fries
Tuesday: Spinach Burgers – trying a new recipe from a friend that sounds delicious!
Wednesday: Ron’s homemade veggie pizza
Thursday: leftovers
Friday: Smoothie pancakes
Saturday: Clean out the fridge

  1. Looks delish! I love food enough that I could spend all day cooking, especially if my sisters or mom was here visiting. I’m pretty sure we have spent all day in the kitchen before. Because really food is about family and that is my justification for loving food haha.

  2. Much sympathy for your grandmother’s passing. I understand what you mean about the older generation’s ability to spend all day cooking, something most of us could never imagine. I’m sure this goes on in other parts of the world still, but the Western woman now has other things to do with her time πŸ™‚ I’m adopting the “Rachel Ray” style of “if I can’t make it in 30 minutes it’s not happening” ha ha!

    1. For smoothie pancakes: blend up a your usual smoothie mix (I prefer a green smoothie) and add it to your pancake mix. I’ve used it with Kodiak Pancake Mix as well as with my own homemade. No eggs, oil or additional water is needed.

      For quac grilled cheese: add it to the cheese in between the bread. Although dipping sounds just as yummy!

  3. I’m planning chicken stir-fry tomorrow, BBQ chicken in the crockpot, sloppy turkey joes but if you want to send those spinach burgers my way, I’d love to help you eat them. Can’t wait to hear how you like them.
