Wow! It is super hot here in NH this weekend. It’s hard to believe that a week ago I was freezing my buns in 40 degree miserable weather and now it’s in the mid 90s. When I sat down to plan our meal for this week, food did not sound appealing. Let me rephrase that, HOT food did not sound appealing. Right now nothing sounds good except cool, crisp salads full of fresh veggies and fruit. I’d be happy with that but I don’t think the rest of my family would be. The temps are expected to cool down for the week so hopefully I’ll be inspired to turn on my oven then.

Tuesday: Guacamole Chicken Salad
Thursday: Black Bean Veggie Wraps + Quinoa Almond Berry Salad
Friday: Avocado Egg Sandwiches
