Meal Planning: Week of June 2

Hi friends!

Wow! It is super hot here in NH this weekend. It’s hard to believe that a week ago I was freezing my buns in 40 degree miserable weather and now it’s in the mid 90s. When I sat down to plan our meal for this week, food did not sound appealing. Let me rephrase that, HOT food did not sound appealing. Right now nothing sounds good except cool, crisp salads full of fresh veggies and fruit. I’d be happy with that but I don’t think the rest of my family would be. The temps are expected to cool down for the week so hopefully I’ll be inspired to turn on my oven then.

Sunday: Thai Peanut Salad with Salmon

Monday: Smoothie Pancakes

Tuesday: Guacamole Chicken Salad

Wednesday: Leftovers

Thursday: Black Bean Veggie Wraps + Quinoa Almond Berry Salad

Friday: Avocado Egg Sandwiches

Saturday:  Leftovers

  1. We are in the same boat over here! Last week I was wishing I had brought mittens. This week I’m in tank tops.

  2. I have felt exactly the same way about food! It has to be cold, or grilled, otherwise I want nothing to do with it. It’s 109 here today with no hopes of getting any cooler for the next 4 months! Thanks for linking to me, and your Thai peanut salad sounds awesome!!

    I wish it were hot here – it is like fall today (55) – I’m ready for some heat and sun!!! Hope it cools down a little for you!
