Meal Planning: Week of June 16

Happy Father’s Day to all the Daddy’s out there! Unfortunately, I can’t spend the day with my Dad but we’ll Skype this morning and catch up.

Since it’s Father’s Day, we’ll be spending the day doing what Ron wants. A pancake breakfast, car show this morning and then dinner at Flatbread Company. Ron is just a little obsessed with that place. He has every right – it’s SOOOOO good!

As for the rest of the week in meal planning, this is what I’ve got planned:

Sunday: Dinner out @ Flatbread

Monday: Build your own green smoothie + almond butter toast (busy, busy day/evening!)

Tuesday: Black Bean and Quinoa Burgers

Wednesday: Baked Broccoli Slaw Egg Rolls + Peanutty noodles

Thursday: Greek Stuffed Peppers inspired by THIS recipe.

Friday: Kiddos birthday dinner – their choice! I’m 99% sure it’ll be Mac n’ Cheese. I’m 100% sure I will be having something else. #notafan

Saturday: Grilled Chicken Chipotle Bowls
