Meal Planning: Week of July 7

Happy Sunday Funday friends!

Hope you are all enjoying the long holiday weekend. I know we are! We’ve either been at the pool or beach everyday since Thursday. It’s been so hot that nothing else sounds appealing.

Let’s get right into meal planning!

Since it’s been so hot and humid this past week, I didn’t feel like turning on the stove at all. Some nights nothing sounded good except a crisp green salad. This week is supposed to be cooler temps wise so maybe I’ll actually follow this plan.

Sunday: Grilled Teriyaki Salmon with Black Bean Pineapple Salsa

Monday: Veggie Pancakes

Tuesday: Summer Succotash Quesadillas with Nacho Mmmmmm Sauce – one of my favorite summer recipes from Mama Pea. The Mmmmmm Sauce is sooooo good!

Wednesday: Grilled Caprese Chicken

Thursday: Leftovers

Friday: Roasted Chickpea Green Salad

Saturday: Almond-Ginger Sauce noodles with veggies and edamame

    That grilled caprese chicken looks good, thanks for sharing the recipe!

      Last week I made chickpea salad using the green tops from the organic carrots I got the other weekend! It was nice cool refreshing and very simple!
      — Shredded carrots, 2 cans of chickpeas, chopped carrot top greens, chopped red onion, 3 tbsp of olive oil and juice of one lemon. Just mix and let marinate in the fridge for an hour!

    And, I’m planning to use my crock pot for cooking so that I don’t have to heat the house up.

  3. Sounds like a good plan, yum!
    I’m planning a few new things this week: crockpot beef & broccoli, spinach and mushroom pita pizza, and some regular favorites: pasta with sun0dried tomatoes and olives and Chinese fried rice with spicy honey chicken. Oh, and Pizza Friday. 🙂

  4. I’m keeping things simple and plain. Grilled chicken, steamed veggies, baked (or possibly chip) sweet potatoes. It’s been rather cool around here for July. I’ve still not made it to the pool because of all the rain and cooler weather.
