Ah, meal planning, we meet again. Last weeks meal plan was a complete bust. I didn’t make one thing that was planned from Sunday to Saturday. The really sad thing (besides feeling like crap) with my stomach bug was seeing all the yummy fresh veggies wilt and not get used. Let’s face it, I’m the one who forces them on my family the most. (Sorry to rat you out Ron, but you know it’s the truth!)
I could just reuse that meal plan for this week but we are having guests this week (my parents!). My plan is still to keep things simple and use the grill a lot. I also think they would appreciate things a little bit more on the meaty side of things. In addition, I’m sure we’ll eat out at least once or twice so this is subject to change.
Here’s my tentative plan for the week:
Sunday: Grilled Hake or Cod tacos
Monday: Veggie Pancakes
Tuesday: Black Bean Quinoa Salad
Wednesday: Build your own pizza for the grill. I want this: Grilled Goat Cheese and Pesto Pizza
Thursday: Choose your own burger – bean or beef – on the grill.
Friday: Grilled Caprese Chicken
Saturday: Dinner out
