Meal Planning: Week of July 21

Sunday! Sunday! Sunday!

It’s meal planning day again! Last week, was full of the triple H’s – hazy, hot and humid. My oven stayed off the whole week. Hot food? No thanks! The heat wave is supposed to break today and temps will be lower. Do I feel like turning the oven back on? Not really. So it’s still about quick, cold and grilling recipes again this week. I did pick a couple oven recipes but they’ll be made only if the temps are not in the 90s!

Here’s what I’ve got planned for the week –

Sunday: Grilled Hake or Cod for fish tacos. Can’t get enough of fish lately!

Monday: Pesto Egg Sandwiches

Tuesday: Edamame Kale Salad

Wednesday: Grilled Thai Chicken Sandwich

Thursday: leftovers

Friday: Green Smoothies and almond butter toast

Saturday: Cauliflower Crust Calzone

Macadamia Crusted Halibut – I swear I pin everything from Ari!

Spiced Shrimp Tacos – I love shrimp but Ron does not. May have to try Jill’s recipe when my parents come to visit next week.

Seedy Quinoa Granola – No nuts and all seeds. Sounds delish!

No Bake (and no sugar) Peanut Butter Cookies – 4 ingredients and I don’t have to turn on my oven – I’m sold!

Carrot Breakfast Protein Cake – Juli’s recipes are unbelievable good. Cake for breakfast? But of course!

  1. This week is going to be a little different because we are going to be eating out a few nights (which is definitely not the norm). Dinner with our parents (first time our parents are meeting) tomorrow which will be fun and yummy, found a great place to try!

    I’ve been on the mexican kick lately…lots of quesedillas and nachos!
