It’s been really cold the past few days. I’m craving belly warming comfort food in a big way. It’s been awhile but it’s time to bring some crock pot recipes back into the mix. If you aren’t using a crock pot, you should! I laugh now when I think back 10+ years ago when we received one as a wedding gift. We returned it thinking we’d never use it! Little did I know that I’d be buying another one a few years later and it would become a life saver!
Here is what I have planned for the week:
Sunday: Heather’s Eggplant Caponata
Monday: Egg sandwiches with avocados and roasted sweet potato fries
Tuesday: Slow Cooker Bean and Spinach Enchiladas
Wednesday: Ron’s homemade pizza
Thursday: Sweet Potato Chili
Friday: Pasta w/ roasted Brussels Sprouts and Red Onions
Saturday: leftovers

Sounds like yummy food. We use the crockpot year round. I love mine. This week we are having crockpot beef stew, vegan chili, spaghetti, blackbean & cheese quesadillas, veggie stir fry with spring rolls, homemade pizza and roasted root veggies with rosemary chicken.
I’m way behind on meal planning this week!! But, I do love my crock-pot(s)!!! I’m always amazed when I talk to people that never use them!! I always take one when we take road trips (skiing…) – no cooking after a long day of playing, sight-seeing, whatever!!

Today is my first attempt in a long time to do some meal planning. I am using my slow cooker today to make some green chile chicken stew, favorite winter soup!
It all sounds yummy, as usual! I am the same way with the crock pot… didn’t use it for the first few years of our marriage, and now it’s indispensable.

I love our slow-cooker too! This past week I used it to make sweet potato black bean chili and a veggie stew–so easy and ready for dinner with no prep at the end of the day!
