Happy meal planning Sunday!

We are enjoying a weirdly warm weekend for January. With temps in the 40s and almost all of our snow gone, it feels more like spring than the middle of winter. I must admit I’m quite bummed with the lack of snow. We’ve only gone snowshoeing once. And I had really hoped to hit up at least one snowshoe race but so far two have been postponed till we get more snow.

February is usually the snowiest month so who knows what’s to come. All we can do is roll with it and hope for snow. But not too much. And not too cold.

That’s not asking too much, right?

Today we are off to see Disney on Ice. I’ve never been. Should I prepare to poke my eyes out from boredom or is it really good? Wish me luck!

Sunday: Chicken and Bacon Chowder

Monday: Crockpot Black Bean Quinoa Soup

Tuesday: Baked Broccoli Slaw Eggs Rolls + Peanutty Veggie Stir Fry

Wednesday: Avocado and Egg Sandwiches + Roasted Veggies

Thursday: Kale and Quinoa Bowl w/ Roasted Chickpeas

Friday: Pizza night

Saturday: Empty out the fridge!
