And Happy New Year!
How’s the year going so far? Mine has been quiet – just the way I like it! Ron and I are still not feeling 100%. This cold thing is holding on tight to us!
I’m relishing in the last day off before getting back to the daily grind and working for a whole week. It sure was nice having a short work week! I’m looking forward to getting back into the routine of things. Yesterday was the first time in two weeks since I’ve been to my yoga studio. I needed it so much!
I’m feeling quite blah in the food department. I overindulged a bit when my parents were here and am just sick of food. Nothing sounds good! A friend told me about this two week clean eating plan so I decided to loosely build my meal planning around it.
I’m bored with food and need some new ideas. I hope I’m not getting the winter blahs already!
Here’s what’s for dinner this week:
Sunday: Baked Salmon + Massaged Kale w/ Butternut Squash
Monday: Chickpea Coconut Curry with Sweet Potatoes
Tuesday: Two Bean Veggie Chili and Kale Cucumber Chopped Salad
Wednesday: Chicken Sweet Potato and Mushroom Quinoa
Thursday: Kale, Onion and Tofu Omelet with Roasted Chickpeas
Friday: Make your own pizza night
