Meal Planning: Week of January 27

I can’t believe it’s Sunday already. The weekends really need to slow down. After going through a craptastic week, I could have used a little bit more down time.  But it’s a new week and things WILL be better. I’m trying to have a positive attitude to set the tone.

When I sat down to meal plan yesterday, I was craving comfort food. Who wouldn’t when it’s only 20 degrees? Lasagna, pizza, warm kale and sweet potatoes just sounded so good. A few weeks ago, I made the Quinoa, Kale and Sweet Potatoes. Ron usually isn’t a big fan of quinoa or sweet potatoes but he actually really liked this. I think it was even better the next day. I also have simple Sesame Udon Noodles on the plan. I’ve never tried Udon noodles before but they sound interesting.

Sunday: Vegetable Lasagna

Monday: Eggs and Green Smoothies

Tuesday: Quinoa w/ Mushrooms, Kale and Sweet Potatoes

Wednesday: Southwestern Pizza w/ Black Beans and Corn

Thursday: Sesame Udon Noodles

Friday: Leftovers

Saturday: Possible dinner out?

    Since I ended up subbing out a few meals last week with other things, I’m going to use some of last weeks ideas this week!

  2. Sounds yummy! Working on our menu, it will include black bean/quinoa wraps, salmon w/cauliflower potatoes & veggie, some sort of stir fry, crab tostadas (never made them before but saw them on a menu at a restaurant we went to in OKC and Kev tried to order but they were out lol). Not sure what else!

  3. I love Southwestern pizzas but for some reason it’s something I always forget about, so thanks for the reminder :) We’re making most of the dinners that were on last week’s menu … darn flu detailed most of our meals. Fingers crossed for this week!

  4. I was just about to sit down and meal plan for our week….I know some sort of soup or stew will be on the menu–comfort food without being too indulgent is going to be the theme around here this week :)

  5. Mmm, lasagna does sound really good. I haven’t made that in so long! It’s just me and L for the first part of the week, which makes me even less motivated to figure out what we’re eating… but I may add lasagna for the second half. Hope you have a much better week! Being able to run should help. :)

  8. I love your meal plans!! Gives me some great ideas. My week is all planned out and there is nothing better then walking into the grocery store with a list! It simplifies my week by not having to worry about what we are having for dinner!! Hope everyone is feeling better in your house:)
