Meal Planning: Week of January 20

For meal planning this week, I consulted my Pinterest food boards for inspiration. I pin so much stuff throughout the week that I rarely spend time just going through to see what I’ve accumulated. It’s a great place to get inspired, try new things and get out of your food rut. Although, I will admit that I tend to pin more dessert than dinners. What can I say, I’m a sucker for chocolate!

Here’s the plan for this weeks dinners:

Sunday: Baked Southwestern Eggrolls

Monday: Egg and Avocado Sandwiches

Tuesday: Tofu Lettuce Wraps with Peanut Sauce 

We don’t really eat much tofu but this recipe from Melanie (the eggrolls are from her, too) sounded delicious. I love a good peanut sauce!

Wednesday: Veggie Pancakes & Green Smoothies

Thursday: Sweet Potato Veggie Burgers

Friday: Leftovers

Saturday: Fish Tacos and kale salad

  1. WooHoo – I actually made a plan this week. I don’t have mine by the day but I do have 5 things I’m going to make for dinners this week!!
    Black Bean Soup
    Tangy Pork and Crispy Baked Cauliflower
    Citrus-Herb Turkey Cutlets with baby Broccoli
    Braised Chicken with peppers, olives & capers
    White Chicken Chili

    • Veggie pancakes are a regular pancake recipe with chopped or shredded veggies to it. We do carrots, zucchini, squash or sweet potato. It’s a great way to get a little more veggies in your day!

  2. Ha! I pin like mad too! It used to be desserts and baked goodies but I have got better at pinning healthy entrees more these days (since I never really bake anyway – just like the idea of it!) I tried out 2 brand new (to me) recipes from my boards this week. One major success and one duffer – Can’t win ’em all though I guess!
