For meal planning this week, I consulted my Pinterest food boards for inspiration. I pin so much stuff throughout the week that I rarely spend time just going through to see what I’ve accumulated. It’s a great place to get inspired, try new things and get out of your food rut. Although, I will admit that I tend to pin more dessert than dinners. What can I say, I’m a sucker for chocolate!
Here’s the plan for this weeks dinners:
Sunday: Baked Southwestern Eggrolls
Monday: Egg and Avocado Sandwiches
Tuesday: Tofu Lettuce Wraps with Peanut Sauce
We don’t really eat much tofu but this recipe from Melanie (the eggrolls are from her, too) sounded delicious. I love a good peanut sauce!
Wednesday: Veggie Pancakes & Green Smoothies
Thursday: Sweet Potato Veggie Burgers
Saturday: Fish Tacos and kale salad
