Last week seemed really long but now that I’m planning meals for this week, it seems like I just did this. It’s tough getting older…
I was all ready to use my crock pot last week for belly warming soups and enchiladas. Truth? I didn’t use it at all! Instead, I did everything in the oven or on the stove top. So much for my convenience plan.
This week, I’m keeping it easy. Less is best in my book!
Here’s what I’ve got planned for this week:
Sunday: Roasted Salmon w/ Zucchini, Lemon and Dill
Monday: Grilled Cheese Sandwiches w/ Lentil Soup
Tuesday: Pierogi w/ Sauteed Red Cabbage
Wednesday: Cauliflower Crust Pizza
Thursday: Quinoa w/ Mushrooms, Kale and Sweet Potatoes
Friday: Leftovers
Saturday: Black Bean, Spinach and Pumpkin Quesadilla

I love pumpkin (or sweet potatoes or winter squash) and black beans. Such a great flavor combo. I haven’t made quesadillas in ages but I used to do that combo all the time. May need to change that this week

I never made quesadillas that much until my kids started to eat solids. It’s the perfect vehicle to get in veggies!
A new barbecue chicken in the crock-pot for tonight.
Ummm…..that’s as far as I’ve gotten for the week. I’m really bad at the meal planning. Every Sunday when I read your meal planning post I think I’m going to do better. Maybe next week!!!
