Meal Planning: Week of February 3

It’s that time of the week again – Meal planning!

Meal Planning Collage 2 - happyfitmama.comI’m not feeling really inventive this week. The only new recipe I’m trying is the Grown Up Tuna Noodle Casserole. Most tuna noodle casseroles make me think of heavy cream canned soup. Blech! But this recipe sounds yummy with the addition of mushrooms and kale and no cream of whatever soup needed.

Tonight is the Super Bowl. We’ll watch but I really don’t have a huge interest. Neither of my teams (Packers first, Pats second) are in it so I’m watching for the commercials and half time. Pretty low key. Although I will say that I hope the 49ers win. If not, I’ll be logging #milesofshame this week.

Here’s what I’ve got planned for the week:

Sunday: Broccoli Slaw Eggrolls with Veggie Peanut Sauce Noodles

Monday: Huevos Rancheros

Tuesday: Roasted Corn Black Bean Soup

Wednesday: Leftovers

Thursday: Grown Up Tuna Noodle Casserole

Friday: Lentil Wraps and Carrot Raisin Salad

Saturday: Breakfast for Dinner

  1. Broccoli slaw eggrolls sound amazing! I need to start planning my weekly meals better (I think I seriously went to the grocery store near my house 4 times last week to pick up more things I needed – whoops.)

    • Actually it’s my husband’s recipe. It’s super easy…sautee broccoli slaw with homemade teriyaki sauce, roll into wrappers and bake in the oven. I’ll try to post the exact recipe sometime this week!

  4. Oh man I haven’t made egg rolls in ages! Those sound incredible to me right now for some crazy reason. I’m planning on doing some prep again today for spaghetti sauce to use twice and prep tofu and rice for either stir fry and curried tofu veggies

    Honey-Lime Roasted Chicken, Lasagna Soup, Chicken Caprese Salad, One-Pot Chili, Tequila Lime Chicken.

  7. Ooh, I love broccoli slaw! The eggrolls sound delicious! I’m still on my Paleo kick so we’ve got more Paleo meals planned for the week. I actually think I’m done on Thursday but I think I might stick with it. At least 90% of the time. I miss my greek yogurt and goat cheese!

  9. Sounds good! This week is short for me, I have a business conference I’m attending in Atlanta at the end of the week.

    On our plan is pizza, fish, steak (Kev) tofu (me). Nothing too exciting!
