I hope you are having a great weekend. Can we talk about the weather for a second before we get into meal planning for the week?
Last weekend it was -30 degrees with the wind chill. Ski school was cancelled for my kids. Every single inch of my body was ice cold. I couldn’t find enough layers to put on.
On Saturday, it rained in the morning and then the sun came out. It got up to 55 degrees. 55 in February?!?! Cra-zy. We have patches of snow. That’s it.
The forecast is calling for just as warm for today. My kids’ have ski school which will be perfect for them. Although I’m not sure how much longer our ski and board season is going to last if the weather keeps being this goofy. Fingers crossed that it sticks around for at least another week while the kids are on February vacation. I’m off from my other job this week, too, so I want to have good weather.
We’ll have to take what we can get!
