Just a quick post today with our meal plan for this week.
I’ve kind of been at a loss for food lately. No motivation to make much in the kitchen so our meals have been very, very simple. I strayed from the meal plan quite a bit last week and improvised. I’ve got a few of our favorites planned so hopefully I can kick the foodie doldrums to the curb.
Sunday: Roasted Salmon and winter veggies
Monday: Brinner
Tuesday: Chicken and Veggie Stir Fry (I gave in to Ron’s request for chicken)
Wednesday: Peanut Sauce Noodles + Tofu Lettuce Wraps
Thursday: Crock Pot Sweet Potato and Black Bean Chili
Friday: Leftovers
Saturday: Chickpea, Tomato and Kale Soup (repeat from last week)
What are you having for dinner this week?

I had the foodie doldrums a few weeks ago. So what did I do? Bought a new cookbook
My plan of attack? A few favorite recipes and a few new. Worked like a charm.

I always try one new recipe each week. This helps me get through all those cookbooks and “pins” I have. The new recipe I’m looking forward to trying this week is Pineapple Shrimp with Quinoa. It looks yummy!

Everything sounds delicious! Salmon with veggies is a staple meal around our house. It’s so easy, tasty, and healthy! I am doing my meal planning for the week later today, so we’ll see what I come up with. I may have to steal a couple of your ideas!

Since I was so sick last week our meals were horrible! I would make up for it this week but my hubby is leaving Wednesday and won’t be back until Sunday so I’m getting off easy
Which means I’ll be having smoothies, salads, and whatever else easy I’m craving. I’m so lazy when it’s just me eating!

For an “off” week, it all looks fantastic! I have those weeks too, where I just don’t feel like making what I planned. Mmm, sweet potato black bean chili is always a hit!

That chili sounds great. My husband and I made a chocolate chili last night – the recipe was in Paleo magazine this month. I don’t follow Paleo but my husband does so I decided to give it try.
