Meal Planning: Week of December 9

Happy Sunday! Do you consider Sunday Funday? Recently I switched my long runs to Saturday instead of Sunday. I love it! I feel like I can lounge around in the morning, make pancakes or scones for breakfast and just chill.

Meal planning for this week is low key. I’m not feeling anything elaborate and time consuming. Quick, nutritious meals is the plan for the week. On Tuesday, we get a rare weeknight dinner out! It’s Ron’s birthday so he chooses the cuisine. I asked him where he wants to go and he said Pizza Hut. I really hope he’s joking.

Here’s what I’ve got planned for this week:

Sunday: Pumpkin, Kale and Black Bean Quesadilla

Monday: Spinach and Cheese Quinoa Casserole

Tuesday: Ron’s choice – dinner out

Wednesday: Leftovers

Thursday: Polenta Pizza – That is if we don’t have pizza on Tuesday.

Friday: Breakfast for dinner

Saturday: Leftovers

    1. I’d love to do mine during the week but I haven’t been able to carve out enough time for it. What would I do with all that extra time on the weekends?? ๐Ÿ™‚

    1. I’m sure it is. ๐Ÿ˜‰ A lot of my patients who have had blood clots or are on coumadin say that’s the hardest part – giving up their leafy greens. You’ll be enjoying your greens soon enough!

  1. I usually always do my long run on Saturdays, but this weekend I switched to Sunday because the weather was yucky and I had a fun run group invite!

    I really wish I was better at planning meals for the week…
