It’s another long Holiday weekend for us. Yay!! We’re all trying to soak in the last of vacation time before it’s back to the regular schedule. Why do they go by so fast?
Last week was a really good food week. I kept dinner simple and stuck pretty close to my original plan. Everything was yummy! I can’t say our little munchkins were happy with my meal plan. What used to be their favorite food now puts them in tears. It’s frustrating to say the least. Do I give in to their requests for nothing but pasta, nut butter sandwiches and cheese sticks? I’m trying not to by giving them at least one food that I know they’ll eat plus what’s prepared. Sometimes it works. Other times? Not so much. Fun times.
Our plans for New Year’s Eve are not definite. Most likely we’ll stay in, maybe order Chinese and sushi take out. For years I HAD to be out of NYE. Stay home? No way! Now I’m much more content to stay home. I’ll probably be sleeping by 10 p.m. Haha!
Here’s what I have planned for this week:
Sunday: Quinoa and Apple Stuffed Acorn Squash
Monday: Take out or baked salmon with kale gratin
Tuesday: Cauliflower – Leek Soup
Wednesday: Homemade black bean burgers and roasted sweet potato fries
Thursday: leftovers
Friday: Breakfast for dinner
Saturday: Avocado and White Bean Wraps

I doubt I’ll make it to midnight, either.
I hear you on the picky kid frustrations… the one-pot kind of meals no longer appeal to L, which is my favorite way to cook. She’ll still eat some veggies if they are separate, but not cooked together in any kind of stew or stir fry. And most of the time would rather have pb, carbs, etc. Like you, I’m not giving in completely, but I hope it’s a short phase!

The avocado wraps sound good … I think you posted about them before? I need to still try that idea out. I am all about wraps every day for lunch. They are quick and healthy! I’m thinking of trying a split pea soup recipe I was eyeballing on Pinterest, yet will probably sub the ham hock for a healthier way. If I can find some nitrate free ham, would be how I will do it. I’m not Paleo or Vegan, just “IBS queen” so my meals involve working with things I can digest well

I used to be one of those people too! This week I’ve been sick and I’ll gladly spend New Year’s Eve at home! =) I’m not one to party it up all the time anymore and I don’t care to battle those on the road that have been drinking all night. I’d prefer to have a few people over or just spend it alone with the furkids and boyfriend.
I’m also planning on having breakfast for dinner this week!

So funny on the kids eating – I remember how favorite foods one week were not so much the next. Just wait – they will get older and will eat everything because they don’t care what it is – they are just bottomless pits!!!
We always have people over for New Year’s Eve – we started after we had kids – family friendly. It is always a random mix of people and some stay through midnight, others just for a bit. Our goal was to make it fun and still be together as a family. So far our boys are still happy to stay home with us – some of their friends are always part of the mix!

So happy to have all the holiday cookies and sweets out of the house. Trying to eat cleaner. I love going to the family friendly events that they have now for New Years Eve. Fireworks at 7:30pm works for me! lol

Toddlers and food. Sophia used to love eggs for breakfast (and I loved having her eat them since it’s such a great protien) but now it’s toast or nothing. Some dinners are so hard at our house: if it’s not chicken or steak, she has doesn’t want it. Wish I could offer more advice!
We’ve been going out on NYE forever, this year will be our first time in since the December Sophia was born. I think I’ll be in bed early too. The holiday’s wiped me out:)

My kids are having friends over. Ugh! What was I thinking when I said yes?!?!?
Finding foods my kids will eat is a gamble that I most often lose. And it’s a safe bet to say if they like it this week they won’t like it next week. Ugh!
