Meal Planning: Week of December 2

I think I kicked my cooking rut! Last week was a good one. In fact, I’m tempted to repeat it this week just because everything hit the spot.

Belly warming food is all I want right now. Sweet potatoes, roasted veggies, bean burgers and soups are high on my list of wants.

This week I have one meal with chicken! We rarely eat meat but sometimes I give in and let Ron’s carnivore side come out.

Here is the menu for this week:

Sunday: Roasted Chicken and winter veggies

Monday: Veggie Pancakes

Tuesday: Sloppy Josie’s – inspired by Mama Pea’s recipe

Wednesday: Ron’s homemade veggie pizza

Thursday: Sweet Potato Quinoa Black Bean Burgers

Friday: Pasta night

Saturday: Quinoa & Apple Stuffed Acorn Squash

    Your food always inspires me. I love eating veggies (especially winter vegs) but I’m just not that creative with it. You make vegetarian meals seem so hardy and “meat” like, I love that. Wish my kids were better eaters though, they pretty much refuse to eat anything I cook.

    • Thanks Lisa! There was a time when I wouldn’t eat any veggies and was the pickiest of picky eaters. My parents are amazed at what I eat now!

      My kids are still pretty young but they are coming into the refusing food – A LOT! Oh well…I try! :)

  2. Glad you’re coming out of the food rut! I’m craving all of the same foods. And I’ve also been realizing how much my husband’s body appreciates meat! We have salmon on the menu this week and may add chicken next week. Enjoy the rest of your Sunday!

    Mmmmm … roast chicken! We don’t eat that much meat either, but aren’t vegan by any means. I have a new favorite chicken roast/bake dish courtesy of a friend that has become my favorite lately.     • All I do is use any basic pancake recipe but add shredded veggies like carrots, zucchini, squash, spinach etc. Most times I add fruit like berries but you can also make it savory with spices and serve with pasta sauce. I first started making them for my kids to get extra veggies in but have found that they’re really good! The whole family eats it now!

    I have been in a veggie rut! I’m 5+ months pregnant and lost my desire for veggies in the first trimester…of all the times!! I’m using the HBBC to encourage me to eat my whole Freggies…for a good cause! And now I’m slowly coming out of the rut and Craving Freggies again! :) Love the idea of adding shredded Freggies to my pancakes! That’s usually our Sunday morning treat; now I can get some more nutrients in there! Thanks.
